St Mary’s Thistle Dukkah

Here’s a delicious way to detox!

To support your detoxification biochemistry give yourself plenty of glutathione.

Glutathione is compound naturally made in your body, however there are some foods and herbs which can boost levels, and enhance your detoxification capacity.

The seeds of St Mary’s Thistle, Silybum marianum, is one of these.

St Mary’s thistle seeds have an interested taste, and can be used as a pepper or hidden in a smoothie. The best way I’ve found so far, is to eat it as dukkah, with some good oil on tomato, cucumber, or a slice of quality bread (if you’re currently eating bread).

St Mary’s Thistle Dukkah

Ingredients:

  • 2 tablespoons sesame seeds
  • 1 tablespoon almonds
  • 2 teaspoons cumin seeds (or fennel seeds, but cumin is nicer)
  • 3 teaspoons coriander seeds
  • 1 teaspoon Himalayan salt
  • 1/2 teaspoon ground black pepper
  • 1 1/2 tablespoons St Marys thistle seed powder

What to do:

Toast the sesame seeds, almonds, cumin seeds and coriander seeds separately in a warm frying pan. Generally you need to move these around the pan regularly to avoid burning them.

Once toasted, grind up the cumin, coriander and almonds. I use a coffee grinder to whizz them, but a bullet or mortar and pestle will also work (and good for your muscles). You might want to chop the almonds a little before you try and grind them.

Add all the ingredients together and stir them in.

To serve:

You can place some dukkah in a small dipping bowl, and fill another small bowl with extra virgin olive oil. Or blend different oils, such as Udo’s oil blend or hemp seed oil, in with the olive oil. Or you could make simple hummous as the dip, if you are reducing your fat intake.

Then dip the vegetable crudite or bread into the oil, then into the dukkah mix. Enjoy.

You can also use the dukkah as a sprinkle onto of grilled foods, into boiled eggs or over salads.
